Look Hooo's Two!

I was SO excited for Rhett's 2nd birthday! He is quite obsessed with Owls and his favorite book is a book called This is Owl (if you don't own it and you have a 1-4 year old, you need to get it)! My mother-in-law showed me the cutest pictures of these cupcakes she found on pinterest and from then on, the theme just fell into place!

Is he not the CUTEST thing you've ever seen!! Goodness, his smile just melts me!

The cutest cupcakes!! Totally worth it!

Fun owl facts!

I also know that watching another kid open presents is not that fun, so I got a craft ready for any kiddo that wanted to do that instead of watch Rhett open a bunch of gifts!

I'd say he's loved!

New toys for days!

Fun with friends!

Thank you to all of our friends and family that came and helped make sweet Rhett feel so loved!

I have to add that there were a few things that went into the planning and prepping of the party! First up, the boys got to make fall themed pictures! You gotta love our Magic Painting Books!!

And these boys were the BIGGEST help in getting our house clean and ready for lots of guests! Seriously, look at these boys scrubbing our bathroom!

After the party the boys had a great nap and then we headed to the Oxley Nature Center to have some fun family time!
I can't get over his cuteness!

I sure do love these people!

Cutest brothers around!

We got to see so many lots of pretty wildlife. They must be pretty used to people walking around because they didn't mind us getting close.

<3

And then we went to Mother Road Market for some dinner!
Such a perfect day! Again, thank you to everyone who took the time to come to the party! We loved seeing you and catching up with you and celebrating our little one being 2!

Trevor's 30th Birthday Wiffle Ball Game

This year for Trevor's birthday, he wanted to play Wiffle Ball. It seems random BUT, we have some friends that do this every year for their birthday. We were invited last year and had so much fun. (Thanks for the idea David and Amy!) Trevor came home that night and ordered a Wiffle Ball set and has been talking about it ever since. So, that's what we did!

Since we celebrated on Cinco de Mayo (we celebrated a little late due to being out of town and a hectic schedule) we decided to have a Mexican feast. We had tacos, taquitos, queso, chips, dip and dessert. I don't think anyone went hungry.
It was fun finally getting to have people over to our house and getting to entertain. We have missed that since selling our other house.

This is where we played Wiffle Ball. Thankfully it was not a muddy mess like we were expecting. It turned out perfect.

These families are so special to me! Thank you for making us a priority and coming to celebrate!

By chance 6 years ago we moved in next to these people. Seriously, God had his hand in our lives before we even knew it.  We were so lucky to have them as neighbors for 4 years! We love you Randy and Cassie! And your sweet kiddos.

You all are true friends! Thank you for coming out to celebrate Trevor! We loved staying up wayyyyy too late catching up with y'all!
What a fun day! HAPPY BIRTHDAY TREVOR and congrats to your team on winning the Wiffle Ball game!

Trevor's actual birthday is April 27th. We did celebrate as a family that day too. I went up to Trevor's work so I could meet his new co-workers and see his new office. Then me and the boys took him to Cheddars.
Thank you Usborne Books and More for keeping my kiddo entertained through lunch! :)

That night we ate fried tacos and homemade Oreo Cheesecake with family!

HAPPY BIRTHDAY BABE!! I hope 30 is one to remember! :)

Strawberry Brownie Dessert

I wish I had a more interesting name for this delicious dessert, but I don't. Awhile back when I wrote about mine and Trevor's anniversary I said that I would share the dessert that I made for that...so here is goes!

Basically you will have 3 different things going on.
1. You will need to buy a package of strawberries and cut them up into whatever size strawberry slices that you want.
2. You will need to make a batch of brownies. I just did them from a box, but knock yourself out if you want to make homemade ones!
3. The filling: mix together one can of Eagle Brand Sweetened Condensed Milk, 1 pkg of instant vanilla pudding, and 1/2 cup water. Mix it well and then let it sit in the refrigerator about 5 minutes. Take out of the refrigerator and fold in about 4 oz of cool whip.

Once the brownies have cooled and you have everything prepared, just layer them in individual size jars or containers - brownie, then filling, then strawberries. This made 8 large serving sizes.

YUM!

Yummy OREO Cheesecake

Trevor's favorite dessert is cheesecake, so I have been wanting to make him one! He really isn't a dessert person, but I secretly know he can't pass up a good cheesecake.

I wanted to do an Oreo one so I just started googling recipes. Some sounded really complicated, so honestly I chose the one that looked easy! Some of the reviews said to add a couple ingredients, so I took all the reviews into considerations and here is what I did:

Ingredients:
36 Oreos
3 tbs butter, melted
3 packages cream cheese (8 oz each)
3/4 cup sugar
1/2 cup sour cream
1/4 cup heavy cream
2 tsp vanilla
3 eggs

Optional: 2 oz chocolate chips & 1/3 cup heavy cream

Instructions:
1. Heat oven to 350 degrees. Place 20 cookies in a resealable bag. Flatten bag and get out all the air. Finely crush the Oreos. I used a rolling bin and slightly beat them. Place in bowl and add melted butter. Mix together. Place the Oreos in the bottom of a 9 inch springform pan and press firmly.

2. Beat together cream cheese, sugar, sour cream, heavy cream, and vanilla in a mixer until well blended. Add eggs one at a time. Crush up 10 Oreos and gently stir those into the batter. Pour over prepared crust. Crush up the remaining 6 Oreos and sprinkle those on the top.

Optional: I melted the chocolate chips and mixed it with the heavy cream and put it in a zip lock bag. I snipped a corner of the ziplock back and made designes on the top of the cheesecake with the chocolate. I'm no professional cake maker, so my design was nothing special, but it added a little flavor, so I liked it.

3. Bake 40-45 min or until center is almost set. (I baked mine about 50 minutes and I should have pulled it out of the oven a little earlier!) Cool. Refrigerate for 3 hours! Then ENJOY!!

This was my first time ever making a cheesecake and Trevor loved it!!! So I'd say it was a success!! It was delicious if I do say so myself!

HAPPY BAKING!!!

Badgers vs Corn Huskers

Here is Branson I work with some people that have gone to both Nebraska and Wisconsin, we so decided to have a little football party to watch the game last night! We ate delicious chili, yummy queso, and lots of other scrumcious food! ;) I decided to make a dessert!..I'm pretty sure I got this little recipe from a friend in college!! I'm sure you will know who you are if you are reading this...so thanks!! Oreo Balls. I know, it's a terrible name. I have thought about making up a new name for little dessert, but nothing has come to mind yet..if you have any ideas by the end of this blog, please let me know! ;)

Here's how you make them
First, all you need is almond bark, cream cheese, and oreos
First you mash up all the oreos...some people may have a better method, I however put them in a walmart sack and smash them up. Usually I double bag them because most likely you will put a hole in at least one of the sacks. After you smash up the oreos, you mix the oreos and cream cheese together! I used my handy dandy mixer that I love!

Before you melt the chocolate, get a cookie sheet (or whatever you plan to put the oreo balls on) ready. This needs to be able to fit in your freezer, so make sure it is not too large. I like to lay foil down on the cookie sheet so I don't get my cookie sheet dirty. Once the oreos and cream cheese are mixed, you need to melt the almond bark. I usually only melt half the almond bark, then once all of that is used, melt the other half. If you melt it all at once, sometimes it hardens back up before you get a chance to use it all and the chocolate starts looking gross.

Then you just roll the oreo/cream cheese mixture into small balls and dip them in the chocolate. Once it is completely covered, lay it on the cookie sheet.

When you have finished all of them, place the cookie sheet in the freezer and let them sit in there for a couple hours. After a few hours, you can take them off the cookie sheet and place them in a tupperware and keep them in your refrigerator.

Here are a couple pics from the party...

Picture with the gorgeous host!!

I obviously don't have a Nebraska or Wisconsin shirt, so I just continued supporting OSU even though they werent playing anyone.
Although Nebraska was just killed during the game, we all had a great time!
